How To Make Homemade Caramel Frosting

Full instructions are below, but here’s a brief recap before you get started. It’s important you read these instructions before you turn on the oven. This recipe isn’t the easiest of frostings, but it is supremely decadent and worth all the effort in the end.

  • Step 1. Sprinkle 1/3 cup sugar in a 3 1/2-qt. Dutch oven; cook over medium heat, stirring occasionally, until sugar is melted. Remove from heat.
  • Step 2. Stir together 1 Tbsp. flour and remaining sugar in a large saucepan; add milk, and bring to a boil, stirring constantly. Remove from heat.
  • Step 3. Heat caramel over low heat until sugar is liquified if cooled.
  • Step 4. Slowly stir in one-fourth hot milk mixture until smooth. Gradually stir in remaining hot milk.
  • Step 5. Cover and cook over low heat 2 minutes. Increase heat to medium; uncover and cook, without stirring, to 238°F. Add butter, stirring until blended. Remove from heat and let stand, without stirring, until 110°F.
  • Step 6. Add vanilla, and whip caramel mixture at medium speed in a stand mixer until spreadable, about 20 minutes.
