Ingredients:
1 pound ground beef or chicken
1 tablespoon taco seasoning
8 small flour tortillas
1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
Toppings of your choice (salsa, guacamole, sour cream, chopped lettuce, diced tomatoes, etc.)
Vegetable oil, for frying

Instructions:
In a skillet, cook the ground beef or chicken over medium heat until browned. Drain any excess grease. Add the taco seasoning and stir until well combined. Set aside.

Heat vegetable oil in a deep fryer or a large pot to approximately 350°F (175°C).

Carefully lower the stuffed tortillas into the hot oil, one or two at a time, and fry until golden brown and crispy, usually about 2-3 minutes per side. Remove from the oil and place on a paper towel-lined plate to drain excess oil.

Repeat the process with the remaining tortillas, meat, and cheese.
